Autumn Porridge with Cranberries

As the days are getting cooler (yes, even in Miami, we can feel a very slight, but still noticeable temperature drop! 🙂 ), hot breakfasts are becoming more appealing for me again. And for my friends that live in the colder parts of the world (like Europe or so), this could definitely be a very nice morning treat. It’s also super fast to prepare, so this porridge totally works a filling and healthy breakfast for a workday too!

This wonderful, colorful and nourishing porridge contains following Superfoods:

  • Oats
  • Apple
  • Berries

Ingredients: 2 portions

  • 1/2 cup oats (old-fashioned, not the instant kind of oat!)
  • 1 cup almond milk (or any other milk you prefer)
  • 1 handful of fresh cranberries (or dried works too, if you can’t buy them fresh)
  • 1/2 Apple, cut into small cubes
  • Stevia to sweeten (low calorie version), or you can also use honey or coconut palm sugar (I personally am not a fan of stevia taste, so I rather add more calories and use honey or coconut palm sugar instead)
  • Pinch of cinnamon
  • Pinch of salt
  • Some strawberries, raspberries or any other berries you can find
  • 2 dried (Medjool) dates, finely cut

  • In a small pan, heat the milk and stir in the oats
  • Let cook for 2 minutes, then add the apples and cranberries for another 4 minutes until everything is nice and soft and porridge-like
  • Sweeten with honey, palm sugar or stevia, add cinnamon and salt
  • Mix in the other fresh berries, top with the finely cut dates
  • Enjoy & have a great day!! You are going to feel super powerful with this breakfast – I promise! 😉
