Superfood Burrito

A Burrito doesn’t have to be fast food, unhealthy and fatty. Nope, not at all. Actually, when I went through the typical ingredients a burrito contains, it’s usually made of many Superfoods! For example avocados, tomatoes and beans. However, when bought at a fast food stand, the filling is usually prepared wit a lot of salt, fat, etc. But all this is actually not necessary at all! I made these very “clean” burritos from scratch. It was fast, easy and it’s incredible how many Superfoods they contain! In fact, I think this is the recipe with the most Superfoods that I have ever posted so far đŸ˜‰ I also replaced some of the “common” ingredients like sour cream with heathier alternatives, like Greek yoghurt in this case.

And these are the amazing Superfoods the Burrito contains:

  • Avocado
  • Tomatoes
  • Pumpkin
  • Black beans
  • Greek Yoghurt
  • Brown Rice
  • Turkey


  • Black beans, from the can, rinse off the sauce from them
  • Guacamole (= mashed, ripe avocado, mixed with some lime juice, pepper, salt and diced scallions)
  • Brown rice
  • Pumpkin mash (= softly cooked pumpkin, mixed with salt and pepper)
  • Tomato salsa (= fresh tomatoes mixed with onions, cilantro, little bit of olive oil and salt)
  • Green yoghurt
  • Turkey, cooked and seasoned with some Mexican spices, salt and pepper
  • Wholegrain Tortillas


  • Prepare all fillings as indicated above
  • Lay out the tortilla on plate, briefly warm up in the microwave oven
  • Then carefully place all ingredients on the tortilla
  • Fold over on the sides, then carefully roll up the tortilla, cut in half and serve with some more salsa on the side
